Roasted Veggies
1 lb or more of your favorite veggie~we really like broccoli,green beans, and Zuchinni but great with any veggie
2-3 T. olive oil
Kosher Salt
Black Pepper
Place the veggies on a cookies sheet. Drizzle the oil over them then sprinkle with Kosher salt and pepper to taste. Bake in a 400 degree oven until veggies are tender. Broccoli and zuchinni take about 20 minutes but other veggies like carrots or green beans take longer!! Just watch and test them out!

I love roasted veggies and you can make them into soup (if there are any leftovers) by adding a little chicken stock.
